Ooh its gone all OCTOBER on us and tis the season for PUMPKINS! Here’s our delicious recipe for…..
Baked pumpkin, rosemary and blue cheese risotto
300g pumpkin, diced Salt and ground black pepper 2 tbsp olive oil 25g cold butter 1 small onion, chopped 1 x clove of garlic, crushed 300g risotto rice 100ml white wine About 1.5 litres warm vegetable stock A few sprigs or rosemary, roughly chopped 100g fresh Parmesan, grated
50ml double cream
100g blue cheese, crumbled
Pop the diced pumpkin onto a roasting tray and drizzle with oil and season with salt and pepper. Place in the oven at 180c and roast for 25 minutes or until cooked and golden.
For the risotto heat the oil and 25g of the butter in a large pan over a medium heat. Add the onion and garlic and cook, stirring until soft and translucent, about 2 minutes.
Stir in the rice and cook for a further 2 minutes.
Turn up the heat and add the wine – it should sizzle. Cook for about 2 minutes to evaporate the alcohol.
Once the liquid has reduced, start adding the warm stock a ladleful at a time over a medium heat, allowing each ladle to be absorbed before adding the next, and stirring continuously. The process of adding and stirring should take about 16 – 18 minutes.
Stir in the roasted pumpkin and then remove from the heat and stir through the cream, parmesan and chopped rosemary.
Serve in a bowl and scattered generously with the crumbled blue cheese. Garnish with toasted pumpkin seeds, if you like.

With the Parke NT and the Dartmoor Pony Heritage Trust watch Braveheart and George the ponies bring the apples down from the orchards and watch the apples get pressed in the old apple press. Come and enjoy some DELICIOUS food (the Dartmoor pork & apple burger followed by warm apple cake and creme anglais is a must!)
